Blueberry Ice Cream Rolls (Thai Stir-Fried Ice Cream)
A trendy Thai street food dessert made by freezing a creamy base on an icy cold plate and rolling it into delicate curls. These blueberry ice cream rolls are smooth, creamy, and packed with fresh fruit flavor.

Ingredients
- ½ cup Liquid Ice Cream Base Equal parts heavy cream and sweetened condensed milk work best for home use
- ⅓ cup Fresh Blueberries approx. 10–12 large berries
- 1 tbsp Blueberry Syrup or Sauce for concentrated color and flavor
- 1 dollop Whipped Cream Optional Garnish
- 5-6 Fresh Blueberries Optional Garnish
- 1 drizzle Blueberry Syrup Optional Garnish
Instructions
- Place the fresh blueberries on your frozen surface (cold plate or a pre-frozen metal baking sheet). Using two metal spatulas, vigorously chop and smash the berries until they release their juices and form a coarse paste.
- Pour the liquid ice cream base and the blueberry syrup directly over the fruit paste. Use the spatulas to fold, chop, and spread the mixture repeatedly.
- Once the mixture thickens into a heavy cream consistency, spread it out into a very thin, even rectangle across the frozen surface. Aim for a thickness of just 2-3 millimeters.
- Position your spatula at a 45-degree angle at one edge of the rectangle. Push forward firmly and steadily.
- The ice cream should peel off and curl into a tight cylinder. Repeat this to create 5–6 uniform rolls per serving.
- Use tongs to lift the rolls and place them vertically into a chilled bowl or cup. Garnish the center with whipped cream, extra fresh berries, and a final drizzle of syrup.
This rapid movement is the "stir-frying" action—it incorporates the fruit evenly and ensures a smooth, crystal-free texture.

Home Kitchen Hack: If you don’t have a professional cold plate, use a heavy stainless steel baking sheet. Freeze the empty sheet for at least 4 hours (or overnight) before starting. Work quickly, as the sheet will warm up fast!
